Moroccan beetroot salad.
Steam 4 medicum beets, cool, peel.
grate and place in large bowl.
Dressing: 2 tbs lemon juice,
2 tsps harissa,
2 tbsps olive oil,
salt to taste, may 1/4 to 1/2 tsp...
mix.. add 1/2 cup small mint leaves or chop them...
pour over beetroot and toss; leave 30 minutes.

raw beetroot salad.
Dressing.
tsp honey
an inch cider vinegar,
about that much oil,
1/2 tsp or more... aniseeds,
whatever amount... basil.
Mix shake and leave for aniseed to infuse. this is another standby in my fridge.
Grate beetroot and carrot together.
Squeeze juice of lemon over.
Add dressing.
Eat.
I sometimes toss parsley in this as well.
I've discovered that finely chopped fresh MINT makes this salad fantastic.

Very yummy recipes MT!
My grandmother used to make this fab salad.
Grate 2-3 beetroots. In a pan add oil, mustard seeds, curry leaves, sliced green chillies, salt and little sugar. Add the grated beetroot and mix well. Once slightly cooked, take it off the burner. Add lemon juice for tanginess.
One can even use grated carrots instead of beetroots.
Here comes a Russian. :alien: Beetroot forever.
Salad#1 - trademark Russian 'vinegarette' (its not a dressing, its the whole salad)
Beetroot, potato and carrot - equal amounts cooked and diced
Onion - 1 medium, raw
Pickled cabbage (aka Sauerkraut)- to taste, really, most use about the same amount as each of the first 3 ingredients or less,
Pickled cucumbers - to taste, I like a lot! :giggle:
Salt to taste
Dressing - Sunflower oil (if you're purist, don't use olive or vegetable, if you don't really care, use any).
Salad #2 - 'Herring in a fur coat'
Have to find proper herring, German fillets in oil will do, just drain them. Fillets diced and placed on bottom of a large flat dish - the whole thing is layered, not mixed!
Second layer - diced onion, should thinly cover the herring
Third layer - cooked and grated carrot
Fourth layer - cooked and finely diced potato
Fifth layer - cooked and grated beetrot
Last layer - mayonnaise
Salt not required.
Salad #3 - 'Sophisticated' (not really :giggle:)
Compulsory:
Grated cooked beetroot (main ingredient, use as much as you can eat!)
Minced garlic (to taste)
Finely chopped wallnuts (also to taste, most people use the same amount as garlic)
Optional:
Grated cheese
Mayonnaise.
