I am in the throes of making a banana cake as I am going weaving tomorrow & need to leave the kids food so I thought I would post the recipe. I have always maintained that cooking is an art not a science so I do not do very exact instructions :D

What you do is melt 100g butter with a cup of honey. Put in some vanilla essence. Mash in 3 ripe bananas & mix in 2 eggs. Then stir in 2c of GF flour. I generally use 2c of rice flour. However I ran out part way thru the last time I made it & used 1 1/2 c rice flour & 1/2 c buckwheat. It then looked a bit gooey so I put in an extra 1/2c walnut flour. It all came out incredibly well so I am going to do that this time. I try to leave it all to soak for a while & then I mix in 3 tsp maybe of baking powder & cook it at approx 180degC until it is done. I put a pinch of salt in if I remember too. You can do things like put in chopped nuts too but my kids prefer it plainer. I guess you could use dessicated coconut as part of the GF flour you use. It would definitely be worth experimenting with. I never ice the cake as it is sweet enuf with the bananas & honey but I would expect a nice lemon honey cream cheese type icing would be very nice. Or even just a plain honey vanilla cream cheese/ mascarpone icing?

By experimentation, I mean once I have sussed the basic cake recipe a bit better, I will do things like replace the bananas with another fruit, such as kiwi fruit or feijoas. Someone I knew made a carrot cake with bananas in the other day which was purportedly very nice so I could maybe try replacing one or two of the bananas with grated carrots, put in some cinnamon & maybe some sour milk if it needs more liquid.
