Anyone here do boil ups? I can get havoc bacon bones here so I have been doing bacon bones for dinner which are really yummy. Super simple recipe.
Fry a sliced leek or some chopped onions in some butter, tallow or lard. Put in some garlic if you want. Throw in the bacon bones & then cover with water & simmer. I usually do a few hours keeping an eye on it. Then add in chopped seasonal root veges eg right now yams, pumpkin, potatoes, kumara, carrots, turnip, swede. After about another 1/2 hr throw in chopped cauliflower, brocolli, green leafies such as chopped kale & cabbage, brussel sprouts, silver beet, spinach, puha. Then when it is all cooked, season & add chopped herbs such as parsley to taste. Serve with grated cheese on top. You could do bread & butter but we are GF so I don't usually bother as I put enuf potatoes in anyways. This is all even nicer heated up the next day.
You could make a similar type of dish with something like lamb neck bones or a bird carcass or an oxtail or some other meaty bone. The idea is the get the marrow, the flavour & the minerals out of the bones into the stew.

boil ups? Oh yes. I put the bacon bone iin the slow cooker in the morning with onions, garlic, celery, smidge of chillii, bay leaves, thyme, carrots and puy lentils (also called French green lentils). Cook all day and when I remember before dinner (hopefully 30 minutes before) I add kale in. The bacon bone works wonderfully with the lentils.

I serve as a thick soup. The next day the leftovers can be spread on sandwiches, or on top of spuds or as the base of a shepherds pie. Or alternatively, I add extra water for more soup servings.

Also on the soup, I sometimes grind chopped parsley, olive oil and garlic into a paste and then put a teaspoonful on each person's soup - tastes yummy.
