Not sure if I'm going to add anything you aren't already doing seaweed, but I'll share some things I do with kale.

Baked beans: this is my meal for when I don't want to cook and there are not funds for fish and chips or I am trying very hard not to eat takeaways for some other reason.
Chop kale and garlic. Saute with small amount of olive oil. Then add pieces of cooked pumpkin (I roast an entire pumpkin sometimes and then put the pieces in the fridge for fast orange food throughout the week). I leave the skin on if it is soft. Then add baked beans (tinned for this so far) an dheat through. I serve with dinosaur eggs - separate post.

hmm not sure what else specific. I add it to almost all soups or one pot meals. I also serve it as a side vegetable sauteed with garlic and olive oil. We have one plant which keeps sprouting new stalks from the roots since I uprooted its neighbour (red russian kale which we didn't much like the flavour of) and disturbed it's roots. Those leaves on the new stalks are tender enough for salads but I haven't got around to that yet. I still haven't decided what to believe on the oxalic acid and whether I should eat kale raw anyway.
