We are off on a big road trip soon. We are gonna camp as I can't afford to motel. I am just writing up a list of everything we need to bring & need ideas for decent nutrient dense food that can keep without a fridge in the summer. Some places where we are going have no shops so I am going to need to take alot with me. We are GF as well. Any ideas?

I often get stuck for ideas.

Are you eating grains?

For our camping trips coming up over the next 6wks I plan on making some little bread buns (I need to use muffin tins since the mixture is more batter-like - just using the Simple brand bread flour) and add some cheese to them, you could grate in some courgette etc as well.

A packet of rice noodles, take a tin of tomatoes and fresh veges to add to make a pasta sauce.

Eggs, veges, potatoes, pumpkin etc - make a one pot fritatta that will most likely come out all messy, but still tasty!

Baked beans

Milk powder

Rice thins with peanut butter

Tinned salmon

I try to avoid grains & was almost going to use this as a way of seeing how the kids go GF. My youngest has been totally crazy over the holidays so it would be an interesting exeriment.

I was thinking too of avocados. As they are easy & I can get some that are not yet ripe to gradually ripen while we are away. Avocados & salmon with some fruit would be an easy meal.

& maybe take some dried fruit

yogurt. Maybe raw milk if I can be bothered to drive to get some as it can just clabber or I will kefir it.

I am taking some pots & pans but I am not sure if we can have fires where we are going.

What about some GF & grain free crackers? I'd need to find a recipe. The kids are usually very fussy about this sort of stuff.

Those nutbars look awesome!!! I think I am going to make some for my family tonight :)

I use butter instead of the coconut oil for a change & you can also add karengo fronds to them. & use any nuts you have to hand. Sub the honey with rice syrup etc.
