Does anyone have any good recipes that use loads of avocados? I was half asleep & went out for the weekend leaving what I thought was a box of green avocados out of the fridge. However they were almost ripe & I am now facing how to eat at least 20 very quickly. The kids will help but they definitely have phases. If I eat nothing else, I can probably manage 3 a day :alien:

Yum.. pity your not local.. I cant stomach paying 99c each for them at the moment.. I'd clean your stores out haha... I mean.. help you eat them *ahem*

I so am gonna need help. Either that or experiment with the avocado diet for a week.

While on track. Avocado omlettes are good. Which is literally just beat up some eggs, throw in a fryingpan & dice in avocado. Or put mashed avocado in. You can do fritata things with other veges & avocado. What else? Guacamole with vege sticks or oven wedges. Sushi with avocado. We do mashed avocado with cocoa powder & honey for chocolate pudding sometimes. Avocado, chopped apple & walnut salad with vinagrette. Hard boiled eggs, remove & mash the egg yolk with avocado. Or make it more exciting & mix in things like chilli powder & lemon/lime juice. Mashed avocado, lemon or lime juice, sour cream & garlic makes a similar dip to guacamole. Avocado & bacon. Maybe I will manage it after all! It was just the thought of 20+ plain avocados with salt putting me off.

Avo Icecream.. (sort of) I know of someone who freezes Avo and Banana in chunks.. then puts it through her screw juicer and makes a frozen pulp out of it... I guess though you could chuck it in a blender or food processor.

I do have a juicer somewhere & a blender. Freezing would be a good option as it would give us time to get thru them. Typically the kids literally just ate the very last banana in the house so I can't do a test run overnight. Have you tasted the avo icecream? What else do you reckon we could make it with?

The most expensive I have seen them here is $1.99 (NZD) each over winter - when they are not in season.. cheapest they get in the vegie mart is about 5 for $2 at peak season (when theres a glut)

Um to the avo ice cream no I haven't tried it... any avo I get is treated like royalty because they are so expensive lol I normally enjoy them in the half skin with balsamic vinegar... that and the smell of bananas makes me want to :smiley_puke:

Avocado chocolate Mousse Dairy free...

1/2 cup dehydrated sugar can juice or honey
1/2 cup water
2 medium sized avocados (300g flesh)
1 tsp pure vanilla essence
1/4 tsp cinnamon (don't use more as the flavour comes out over a few days)
1/2 cup good quality cocoa powder
juice of 1/2 small lemon

Put all ingredients in a food processor & process to combine
refrigerate until required
Serves 8


Avocado soup from Amanda Laird

Serves 4

3 ripe avocados
1 x 425ml can of coconut milk
1/2 cup iced water
3 Tbs plain yoghurt
2 Tbs lemon or lime juice
2 Tbs avocado oil
Salt
2 slices sourdough bread
Olive oil
2 tomatoes
Fresh basil leaves (Thai if available) to garnish

1 Halve the avocados, remove the stones and scoop out the flesh. Puree in a blender with the coconut milk, water, yoghurt, lemon or lime juice and avocado oil, adding salt to taste. Puree until completely smooth, adding more water if necessary, then refrigerate.

2 Cut the crusts off the bread and dice finely. Heat a pan, adding a little olive oil and toast the bread until golden. Halve the tomatoes, remove the seeds and finely dice.

3 Ladle the soup into chilled bowls, top with the croutons, tomatoes and basil. Drizzle over a little avocado oil before serving.

Mine are biodynamic & work out to about $1.40nz each. I wonder what would happen if you froze the chocolate mousse? I think I used all the cocoa the other day so that may rip that one till I go shopping again. I wonder if you could sub them for cream in other recipes? A baked custard for example? It's way too late to eat so I will deal to it tomorrow after I've had avocados for breakfast & lunch!

$1.40 ea today... they stayed at the vegie mart - I actually haven't had ANY this season... its sad.

Ours are about $1.40 as well.

Haven't made this for years but is YUM!

Cook up some corn kernels and cool.
Chop in avocado.
Drizzle over some vinegarette (we used to buy a creamyish one that was very nice).

a favorite here is;

avocado, heart of palm, cherry tomato's, red onions then mix a little bit of mayo with lemon juice / salt&pepper and optional crushed garlic....
yum!

One of my friends was just giving me an almost identical recipe but without the palm hearts that she has with smoked fish. Still struggling to get thru the avocados here. I gave some away which helped but I forgot to get cocoa today so I could stuff the kids full of chocolate avocado mousse.

bumping this again as we are staring down the barrel of another 30 or so avocados.

'nother recipe
bacon and guacamole sandwich. which i guess you could so pretty much any type of thinly sliced meat with guacamole as a sandwich.

ive been doing alot of salads with avocados for lunch but they are getting boring. i do def prefer to keep them raw.

omg i found this!!! chocolate avocado cake with avocado buttercream icing. it is vegan, so it could be useful once i've worked out what fat to use, as i do have to bake vegan occasionally. i am gonna try it with butter and GF flour tomorrow.

dad used to give them to me out of the skins with salt when i was little. they are awesome on toast with some butter and sliced tomatoes. or stuffed inside some hot toasted pitta bread with some sliced tomatoes. that is if your kids eat bread. simple guacamole always goes down will with my kids. it is literally just blanch and chop a tomato as finely as you can but keep it recognisable, juice of half a lemon, bit of salt, bit of chilli or cayenne but not too much, finely chop a clove or so of garlic to taste. mash in two ripe avocados and mix it all well. leave to sit for a while and have with cornchips or vege sticks. gonna try the avocado and choc cake tomorrow. got side tracked at the weekend and also had to bake a choc fudge cake to take away as i wasnt prepared to risk the avocado cake for an outing.

ok well avoid the choc avoc cake. it was very bland. the icing was prob the best bit so keep it in mind if you ever want lurid green icing for something which is not full of fake chemicals, just sugar lol
